A Khandeshi Thali is a rustic, intensely fiery platter from the Khandesh region (northwestern Maharashtra, including Jalgaon, Dhule, and Bhusawal). It is widely famed for its sharp heat (zhanzanit) and its trademark use of dark, deeply roasted spices known as Kala Masala (black masala).

  • Shev Bhaji: The ultimate vegetarian highlight—a thick, fiery red or black gravy topped with crunchy, spiced chickpea flour noodles (shev).
  • Varan Batti / Bafle: Similar to Rajasthan’s dal-baati, battis are whole wheat dough balls that are steamed, sliced, and deep-fried to a crisp golden finish. They are crushed and eaten soaked in thick, simple yellow dal (varan) and pure ghee.
  • Vangyache Bharit: A smoky, roasted eggplant mash prepared with spring onions, green chilies, and a generous amount of crushed peanuts.
  • Kala Masala Rassa (Veg/Non-Veg): Fiery curries made with mutton, chicken, or vegetables (like stuffed eggplant) simmered in a dark, complex gravy made from heavily roasted onions, dry coconut, and hot lavangi chilies. A distinct layer of spicy red oil (tarri) always swims on top.
  • Kalanachi Bhakri: A traditional, dense flatbread made from a unique mix of jowar (sorghum) and black gram (udad) flour, perfect for wiping up the spicy gravies.
  • The Sweet Ending: Balanced out with cooling taak (spiced buttermilk) and Shevayanchi Kheer (sweet vermicelli pudding).
