Key Features
- The Flakes: Thick or medium flattened rice (poha) is rinsed until soft, then tossed with turmeric, giving the dish its signature bright yellow color.
- The Tempering (Phodni): The flavor base comes from a tempering of mustard seeds, green chilies, curry leaves, and a generous amount of finely chopped onions (kanda).
- The Textures: Crunchy roasted peanuts are mixed in to provide a perfect contrast to the soft, pillowy rice flakes.
- The Garnish: It is traditionally finished with a squeeze of fresh lemon juice, a sprinkle of fresh grated coconut, and finely chopped coriander leaves. It is often served with a side of crunchy sev or farsan.
